Mousse divine/Heavenly mousse...

Mousse au citron/Lemon Mousse:

Recette divine qui me vient de ma chère amie Basia/ Heavenly recipe from my dear friend Basia

Zest et jus de 3 citrons/Rind and juice of 3 lemons
4 oeufs moyens/4 medium eggs
75g de sucre semoule/75g caster sugar
15ml (1 cuiller à soupe) de gelatine en poudre ou 10g de gelatine en feuilles /15ml (1 tbsp)powdered gelatine or 10g leaf gelatine
300ml de crème fleurette/300ml whipping cream
Mélanger zest, jaunes d'oeuf et sucre jusqu'à blanchissement/ Mix lemon rind, egg yolks and sugar until pale and creamy
Laisser tremper la gelatine pdt 5min dans le jus de citron, au bain marie dissoudre la gelatine dans le jus, puis ajouter au mélange précédent/ Leave the gelatine to soak in the lemon juice for 5 minutes then stand the bowl over a saucepan of simmering water until the gelatine has dissolved, then stir into the egg mixture
Mettre au congélateur quelques minutes pour épaissir légèrement/Leave in freezer for a few minutes to thicken a bit
Fouetter la crème et ajouter au mélange précédent/ Whip the cream and add to the previous mixture
Battre les blancs en neige puis incorporer au mélange/ Whisk the egg whites and lightly fold into the lemon mixture
Repartir dans ramequins et laisser refroidir pendant 2-3 heures/ Spoon into serving dishes and chill for 2-3 hours
